The Chefs

Adam Fendyke

Prior to securing the position as soux chef at the prestigious Royal Hotel in 1999, where he ran and trained a large team of chefs to 2 Rosette standard,

Adam worked in world renowned Le Manoir Aux Quatre Saisons (2 Michelin stars) as well as the highly esteemed Chewton Glen (1 Michelin star). Here he refined and perfected his skills to the highest standard, sharpening his natural flair for creating contemporary dishes whilst developing his personal food philosophy.

 

Adam’s passion for flavour and distinctive style won him the Isle of Wight Chef of the Year Award 2001, 2002 and 2003. In 2010 he took the position of Head Chef at Goodman’s Bistro, where he used only the freshest and most seasonal products, strictly sourced for their quality and provenance. Adam drove his team to create tantalizing seafood, meat and vegetable dishes, later applauded when winning the Best Bistro Award 2010.

Giancarlo Giancovich

With roots planted in Italy and China, Giancarlo grew up in a household immersed in international flavours.

His passion for fine food, travel and the ocean are evident in his ability to bring together plates of harmonious, charismatic and satisfying cuisine with a distinctive Mediterranean slant.

Having cheffed in some of the Isle of Wight’s most acclaimed restaurants from the Royal Hotel (2 Rosettes), Hambrough Hotel (1 Michelin Star) and the Pond Café (2 Rosettes), Giancarlo then worked alongside Adam, as soux chef at the award winning Goodman’s Bistro.

 

It was during this time that the friends became intent on creating a lively and approachable restaurant where the very best of food and drink could be served in a fun, stylish and welcoming setting. Tramezzini was born.
